Okay, here are the rules:
Before we start anything, we'll need teams. This issue is being taken care of by the team captains, in the Quidditch Sign Up forum. Post and apply - there will be no games until all teams are complete.
After this, one of the admins will post on the CALENDAR ( look under the logo, at the top of the page. you see a little icon saying CALENDAR? Click there ) the dates for each match.
As soon as the date is fixed, the captain of each team will start a thread. It should have the title " [insert name of the house here] Practice ", in which all the team members will post and roleplay, practicing Quidditch. These threads will be closed by the admins two days before the match.
Based on which house put more effort in those threads, the Heads of House will choose a winner, but won't reveal it.
The day of the match, one admin will start a thread that should have the title "[insert name of the house here] versus [insert name of the other house here]" and then, it's up to the players. Eventually, the admin will post again saying the snitch has appeared and will PM both seekers. Only those two seekers will know who was chosen to win the match, and will act according to that.

Okay, here's an example, if it got too confusing:
Imagine this:
We've fixed the date for the Ravenclaw x Hufflepuff Quidditch match. It will be, let's say, February 31st. The Ravenclaw captain will start a thread named "Ravenclaw Practice" in the OUTSIDE THE CASTLE forum. The Hufflepuff captain will start a thread, also in the OUTSIDE THE CASTLE forum, named "Hufflepuff Practice". All the team members show up and post, making their characters train their abilities and such.
On February 29th (two days before the match), the admins will lock both threads and read them.
Let's say Ravenclaw had a rather organized thread; all the players succeeded and everything was great. Hufflepuff, on the other hand, had an organized thread too, but the players reveiled some flaws and tried to correct them ( which is more realistic ) and was more convincing. Also, Hufflepuff posts were more enjoyable and interesting: original things happened, like one player fighting another one.
We'd choose Hufflepuff, because it was, overall, more interesting and the roleplayers did a better job - of course this is relative, but if your team doesn't win at first, it will probably win next time.
During the match, Professor Berton will post on the "Ravenclaw versus Hufflepuff" thread and say something like:
"Flying through the air, the small golden snitch appeared."
Then, we'll PM both seekers, saying Hufflepuff should catch the snitch and win.
Got it?
One last request: make it realistic. It's up to you to control your characters, right, but pleaseeee. DON'T make them score in every single post and make them look invencible. It will be no fun at all. Also, we admins can change our mind about who should win, so be careful. Remember you can't say what other characters do: no godmodding! Don't say you scored; say you aimed for the goal. The keeper will choose if they catch the quaffle or not.
Good luck
